Studio Mazaar develops hospitality venues and concepts. The starting point might be an empty building, an existing venue or an idea that needs shaping. We work out what the place could be, secure the site and the permissions, then lead it through to opening.

The place, the people and the reason to come
We read the site, the neighbourhood and the audience it could serve, and bring the commercial case in from the start. The result is a direction worth pursuing, and a clear view of where an idea needs to change before it goes further.
Develop the concept
A place with its own identity
Concept, naming, food and drink, brand, space, operator mix and programming develop together, with the operating model shaping the creative decisions. Great Northern Market shows the whole sequence: concept, name, tender and creative direction, carried through the food and operating model.
Secure the site
Lease, planning, licensing and consultation
We negotiate lease terms with landlords, lead the planning and premises licence applications, and run the consultation with the community, the council and local stakeholders. Dominic writes the core briefs, leads the application teams, appears at committees and negotiates the conditions, so a scheme reaches the build with its lease agreed and its permissions in place.

From first brief to open doors
We bring the right specialists around the project and hold the direction as it develops, across design, operational planning, programming and launch. The Tramshed Project put that to work in a landmark Shoreditch building through the pandemic.

Specialists join around the brief. Architects, designers, planners, chefs, operators and producers come in at the point their discipline is needed. The team changes with the project. The direction stays with Dominic.
“Dom came in and figured out exactly what we needed in that restaurant space. He identified live-fire cooking as the right direction, built the entire Firestarter concept around it from the ground up, and created something we’re genuinely proud of, a brand that sits perfectly alongside our pubs but has its own identity. He led the visual identity work with our design agency, oversaw the food menu development, wrote the cocktail list himself, and worked brilliantly with our ops and marketing teams to get us from concept to open doors. Couldn’t have done it without him.”
